Nicky is a passionate and qualified Nutritional Therapist (Irish Institute of Nutrition and Health, 2011) and Natural Chef (Bauman College of Holistic Nutrition and Culinary Arts, 2013). Her culinary journey began in earnest in 2014 when she founded The Fresh Food Deli and served as head chef at the Hopsack Health Store for over three years. Her dedication to flavour-packed, health-conscious food earned a nomination for Best “Free From” Restaurant at the Irish Restaurant Awards.
Craving adventure and deeper healing, Nicky spent a transformative year as head chef at the Farm of Life Healing Centre in Costa Rica. There, she immersed herself in raw vegan cuisine and holistic wellness, ultimately healing her own cervical dysplasia and HPV virus through food, nature, and alternative therapies.
Bringing together her deep nutritional knowledge and culinary creativity, Nicky authored A Practical Guide to Cooking for Health—a supportive and accessible guide that has nourished kitchens around the globe.
Over the past six years, Nicky has worked as a freelance chef for healing retreats across Ireland. Her food is a vibrant expression of health and artistry—nourishing body, mind, and spirit with every colourful, flavourful bite.
Beyond the kitchen, Nicky supports women as a Nutritional Therapist and Belief Coding® practitioner, specialising in healing journeys related to HPV and cervical dysplasia. She also facilitates soulful retreats and workshops, weaving in Cacao Ceremonies, Shamanic Trance Dance, Song Circles, and Meditation.
For the past six years, she’s also worked with Inwardbound’s Celtic Psilocybin Retreats as both a chef and facilitator, while continuing her studies in the realms of shamanism and plant medicine.
